Pomegranate Apple Salad

Pomegranate Apple Salad

For whatever reason, Tyler decided we needed a Costco sized bag of apples the other day (ya know, for our family of 3…). We ended up with 2 fruit bowls filled with apples. Desperate to make sure we didn’t waste like, 12 of them, I was inspired to make this Pomegranate Apple Salad.

This is one of those things I just kind of whipped up. With the move and everything, I was missing about half the ingredients I would normally put in a salad dressing. So my expectations were low. Reeeeally low. But it worked out! So much so that I’m now sharing it with you guys. Because I’m telling you, it’s sooooo easy! And that’s what we like, right?

Pomegranate Apple Salad
For the Salad

2 Apples, sliced
1 Pomegranate
1/2 cups walnuts or pecans
Feta
Spinach

For the Dressing

1/4 cup apple cider vinegar
1/4 cup honey
1/4 cup olive oil
Salt & pepper to taste

 

The Instructions are pretty straight forward:

Toss a few handfuls of spinach in a bowl. Create a murder scene by dissecting the pomegranate and adding the seeds to the bowl. Slice up a couple apples (I like to then cut them in half). Toss in the walnuts and as much feta as desired (aka. a lot)

For the dressing, whisk all ingredients together and drizzle on top of the salad. Toss and enjoy!

It really doesn’t take much to make it look like you’ve tried! And luckily with this, it’s all the right colours and flavours for a festive holiday salad!
