Super Food Energy Balls

I’ve said before, I REALLY try to avoid buying things that belong in the cupboard when I go grocery shopping.  And what I mean by this, is anything processed.  I try to stick to rice, gluten free pasta, oats, nut butters, and then the odd canned veggies and beans (check out my Mexican Salad Bowl)

It can be hard sometimes because when you’re pressed for time (It’s 2017. Who the hell isn’t pressed for time?) you wan’t something quick to grab. Like cookies. Or granola bars or energy/protein bars. I would probably kill for a pop tart.

I’m not saying I NEVER get these things. But I really try to avoid it. Instead, I buy ingredients to make my own “on the go” snacks. Trust me, you’ll feel WAY better about snacking if it’s something you made from scratch.

Energy Balls are probably my favorite thing to make. And here’s why:

NO BAKING REQUIRED. amen.

THEY’RE ACTUALLY QUITE FILLING. one for a quick pick me up. two to three if you can’t eat again for a while…. or just cuz.

GUILT FREE. and they’re like a treat

For those of you who’ve subscribed, my last newsletter broke down the recipe I’ve been using for Energy balls. I told everyone I was working on one a little healthier and with more superfoods. So here it is!

ADD TO MEDIUM SIZED BOWL:

1 cup Oats

1/4-1/3 cup cocoa nibs

1/2 cup ground flax

2/3 cup unsweetened coconut

1/2 cup honey or agave

1 cup raw almond butter

1 tbsp chia seeds

1 tbsp bee pollen

2 tbsp hemp hearts

a sprinkle or two of sea salt

splash of vanilla extract

Mix all together. You may need to get in there and mix with your hands. Once everything is combined, cover the bowl and refrigerate for 30 minutes. Roll into 1inch balls. And there you have it!

Here’s what those “superfoods” do for you:

  • COCOA NIBS – burns fat. Chocolate. flavoured. fat. burners. You heard me. They’re also full of fiber, potassium, and magnesium, antioxidants.
  • BEE POLLEN – improves immune system (Lily catches everything! and then passes it on to me. So I need all the help I can get), enhances energy, and is great for aiding digestion. These are only a few of bee pollens many benefits, but some of the main reasons I love adding it to food and smoothies
  • HEMP HEARTS – Rich in omega-3 and 6.
  • FLAX SEED – MORE omega’s. Anything to avoid taking those horse sized vitamins PLEASE! Also, helps to reduce inflammation. Again, just a couple amongst many benefits.

Seriously you guys. They’re so easy and simply just a healthy thing to grab when you’re running out the door.  I hope you like them!

  • Ingredients (1 serving): 	•	2 oz blanco tequila 	•	1 oz guava nectar (like Goya or Ceres) 	•	1 oz fresh lime juice 	•	¾ oz Cointreau or triple sec 	•	½ oz agave syrup (or to taste) 	•	2–3 slices fresh jalapeño (remove seeds for less heat) 	•	Tajin or chili-lime salt, for rim 	•	Ice  Optional garnish: 	•	Lime wedge 	•	Guava slice 	•	Jalapeño round  Instructions: 1.
