Detox On The Rocks

June 8, 2017

Chocolate Raspberry Chia Pudding

Detox on the Rocks is all about finding YOUR balance. I’m a big believer in that if you want something, go for it. Treat yourself. Just do so in moderation – or find a way to make it healthy.

For instance, if you love to sip on something carbonated: instead of a coke (or even diet coke because aspartame? Ew.) go for a soda with fresh limes.

You have a sweet tooth? SHARE your desert with your dinner date. Or treat yourself to just a bite.

THIS RECIPE though. It’s for the chocolate lovers. I love knowing there’s a way to make chocolate desserts healthier and guilt free. (check out my Chocolate Smoothie if you need an excuse to have chocolate for breakfast)

If I’m being totally honest… I’m not the biggest chocolate person. OR sweets person. I definitely have more of a salt/fat tooth. (boy taste buds). But I really do get the odd craving for something a little sweet here and there –  and when that happens, I always cave.

Maybe it’s because I don’t feel as guilty knowing it’s something I don’t have often. But I always give into it. And my favourite way to have chocolate is with berries. (chocolate covered strawberries are my jam)

I like just a little bit. Something small. Something rich. Quality ingredients. I don’t want to feel gross after.

I love to make chia puddings because they are so full of healthy ingredients, yet taste like a treat. Check out my superfood breakdown to learn more about the health benefits of chia.

Also, I love weird textures so I LOVE the way they gel.

They’re also a great thing to make when you’re doing food prep! You can make a bunch of jars in just minutes and keep them in the fridge for the week. You know I’m a fan of anything fast and convenient. These aren’t just for dessert! They’re great for any time of day and should definitely kill that craving for something sweet.

♥

Okay. You just came for the recipe. Here’s how to make this Chocolate Raspberry Chia Pudding…

In a blender, mix:

1 cup coconut milk

1 cup raspberries

1 tbsp unsweetened cocoa powder

1 tsp honey or agave

small splash pure vanilla extract

Divide evenly between small jars (those tiny mason jars work great too.)

Then, take 1/4 cup chia seeds and sprinkle evenly between all jars.

Seal the lids on the jars and shake! Store in the fridge overnight until the chia seeds kind of gel.

Add extra raspberries or cocoa nibs when it’s time to snack!

I hope you guys enjoy! What adult doesn’t still love pudding?
