A Not-So-Boozy Brunch: Virgin Ginger Kombucha Mimosa

9 months of pregnancy sure had me missing wine and spicy margaritas. Watching my boyfriend order a beer at dinner while I got to sip on a club soda with lime just wasn’t fair. And those nights where we’d cozy up with a movie, fireplace, and fuzzy blankets… I mean, typically we’d open a bottle of cab, but I had to swap that out for a can of La Croix and let me tell you – it’s just not the same.

I decided I had to get a little creative and come up with a new mocktail. Here’s the thing with most mocktails you order at restaurants though: They’re typically too juicy, too sugary, too sweet, and are in no way a good substitute for your favourite cocktail. They’re usually something you’d order for a 5 year old on their birthday. Shirley temple? No thanks!

Before coming up with a new cocktail replacement, I knew I wanted something with Kombucha. It’s always my go-to when I’m skipping the alcohol because, like I mentioned, it’s sippable. Depending on the kind you get, it kind of tastes like a cocktail itself. And bonus: it has health benefits. I’m all about adding benefits where possible.

Tyler, Lily, and I love to do a big Sunday brunch. Lately they’ve been consisting of waffles or banana oat pancakes, turkey bacon, eggs, and a huge bowl of local fruit. This Ginger Kombucha Mimosa has been the perfect addition!

Virgin Rosemary Ginger Kombucha Mimosa

 

Virgin Ginger Kombucha Mimosa

Ingredients:

.5 oz Rosemary Simple Syrup
Brew Dr. Ginger Turmeric Kombucha
Splash Orange Juice

Add simple syrup and kombucha to a champagne flute – fill till about an inch of room is left at the top. Give a quick little stir! Add a splash of orange juice and garnish with a sprig of rosemary.

For the Rosemary Simple Syrup:

1 cup sugar
1 cup water
4 tbsp fresh rosemary

Add all ingredients to a saucepan and bring to a boil over med/high heat. Stir, remove from heat and let cool. Easy peasy!

You can really use any ginger kombucha you like, but I prefer the Brew Dr. ginger turmeric because I find it has a good amount of spice to it and isn’t so sweet. Also love how we can buy it at costco!

  • Ingredients (1 serving): 	•	2 oz blanco tequila 	•	1 oz guava nectar (like Goya or Ceres) 	•	1 oz fresh lime juice 	•	¾ oz Cointreau or triple sec 	•	½ oz agave syrup (or to taste) 	•	2–3 slices fresh jalapeño (remove seeds for less heat) 	•	Tajin or chili-lime salt, for rim 	•	Ice  Optional garnish: 	•	Lime wedge 	•	Guava slice 	•	Jalapeño round  Instructions: 1.
